2 pounds milkfish,or any
fleshy fish,cleaned and dressed
1/3 cup white distilled vinegar
1 1/2 tsps salt
2 cloves garlic,crushed
1/2 tsp ginger,crushed
1/2 tsp peppercorns,whole
1 1/2 oz can coconut milk
1/8 tsp red pepper flakes
Cut fish into pieces,put in a non-stick skillet,and add the
vinegar,salt,garlic,ginger and peppercorns.Bring it to a boil
reduce the heat and simmer,covered,for 10 minutes,turning
the fish once during cooking.
Add the coconut milk and red pepper flakes and cook over
moderate heat for 5 more minutes.
