Ingredients:
2 pounds large,headless shrimp
1 tsp salt
1/2 pound ground lamb
1/4 cup green onions,finely chopped
1 tsp white pepper
3 tbsp soy sauce
1 tsp sugar
2 egg yolks
1 1/2 tbsps cornstarch
1 tsp sesame oil
1/4 cup finely chopped mushrooms
1/2 cup carrots,julienned
Batter:
1/4 cup water
2 egg whites
1/2 cup cornstarch
1/2 tsp salt
oil for frying
Method:
Peel and devein the shrimp,keeping the tails attached.
Sprinkle with the salt and set aside.
In a bowl,combine all the rest of the filling ingredients and mix well.
In another bowl,mix the batter of water,egg whites,cornstarch and salt.
Cover each shrimp with some of the filling and dip each into the batter,holding it by the tail.
