1 pound red radishes or
japanese daikon
1 1/2 tsps salt
1/4 cup distilled white vinegar
2 tsps sugar
1/2 tsp black pepper
1 medium tomato,diced(optional)
1 medium onion,diced(optional)
Method:
Peel and slice the radishes paper-thin.Sprinkle with salt
and work the salt in by hand.Rinse well and drain.
Mix the vinegar,sugar and black pepper together in a cup
and pour over the radishes.Refrigerate for atleast 2 hour.
Add the diced tomatoes and onions to the radishes just
before serving.
This is a delicious vegetable side dish.its flavour improves if it is
allowed to refrigerate for a day or two before serving.
