Ingredients:
3 lb chicken, cut into 8 to 10 pieces
4 Shallots
7 Candle nuts
3 Garlic cloves
1 tbsp Minced galangal
1/2 tsp turmeric powder
2 tsp tamarind pulp
2 Lemon grass ,bruised
1 tsp sugar
1 tsp salt
oil for frying
3 cups Water
Method:
Ground shallot, garlic, candle nut, tumeric, galangal, and salt.Add water if necessary.
Marinate chicken with the ground paste, tamarind, and lemon grass for at least half an hour.
Transfer the chicken pieces to a pot, add water, then simmer until the liquid is evaporated.
Deep fry the chicken pieces until golden brown.
Serve chicken with fried rice.
